Follow each step to make the recipe successfully.
Add 1 cup split pigeon peas, 1/4 cup split red lentils, and 1/4 cup split chickpeas to a colander. Rinse thoroughly under cold water to remove any impurities. Transfer the rinsed lentils to a bowl, cover with plenty of water, and let them soak for to rehydrate.
Add 1 cup basmati rice to a colander and rinse thoroughly under cold water until the water runs clear. Transfer the rinsed rice to a bowl, cover with water, and let it soak for .
Combine 3 small tomatoes (or 1 large), 2 roughly chopped shallots, 4-5 cloves of garlic, 1 fat chunk of peeled ginger, 1 green chili, and a pinch of salt in a blender or mini food processor. Blend until the mixture is smooth and fine. Pour the aromatic paste into a small bowl and set aside.
Drain the soaked lentils, discarding the soaking water. Transfer the lentils to a pot. Add a few slices of ginger, 1 split green chili, 1/2 tsp turmeric powder, and 1/2 tsp salt. Cover everything with approximately 4 cups of water. Bring the mixture to a boil over medium-high heat. Add a splash of cooking oil to help prevent the lentils from boiling over. Once boiling, stir the lentils, then the heat to low, cover the pot, and let everything gently for about , or until the lentils are soft and cooked through, becoming mushy.
Drain the soaked basmati rice. Bring a separate pot of water to a rolling boil. Add 1 tsp salt to the boiling water. Squeeze in the juice from half a lime and add the lime rinds to the water. Drop the soaked rice into the boiling water. Cook for about until the rice is (about 90% cooked). Fish out and discard the lime rinds. Drain the rice into a colander. Gently loosen the rice with a fork, fluff it, and let it off and cool down.
Check the cooked lentils; they should be soft and mushy. Remove the ginger slices and chili pieces from the lentils and set the cooked lentils aside. In a large saucepan, melt 2 tbsp ghee over medium heat. Add 1 tsp whole cumin seeds and let them until fragrant. Add 2-3 dried chili pieces. Then, add 1 finely shallot (or red onion) and cook until it's and golden. Pour in the prepared aromatic paste. Stir everything together and let it a little, stirring occasionally, until the flavors concentrate. Add 1 tsp garam masala, 1/2 tsp turmeric powder, and 1 tbsp Kashmiri chili powder (or smoked paprika). Stir these spices into the base and let it cook until the oil separates and rises to the surface.
Pour the cooked lentils into the saucepan with the dal base. Stir everything together. Remove any remaining whole chili chunks. Let the dal for about to allow the flavors to mingle and marry. Give everything a little stir. Add 1/2 tsp more garam masala for warmth and 1/4 tsp fenugreek seed powder. Add extra salt to taste. Mix and taste. To elevate the flavors to a restaurant level, add a pinch of MSG, 1/4 tsp sugar, and a splash (1 tsp) of neutral white vinegar. Cover the dal to keep it warm.
In a large pan or wok, melt 1 tbsp ghee over medium heat. Add 1 tsp dried whole cumin seeds and bloom them until fragrant. Add the cooked basmati rice. Season with 1/2 tsp salt and mix well to combine. Toss in 1 tbsp chopped cilantro and give everything a quick stir.
In a small pan, melt 1 tbsp ghee. Add 1 thinly sliced () shallot. Stir constantly as they fry until they are nicely golden and . Take the pan off the heat. Let the residual warmth bloom 2-3 dried chili pieces, 1/2 tsp Kashmiri chili powder (or smoked paprika), and a pinch of hing (asafoetida) into the seasoned ghee. Stir to combine.
Just before serving, stir 2 tbsp of chopped cilantro into the dal. Ladle the dal into a serving bowl. Top everything with the onions from the final tadka. Spoon over the infused ghee from the final tadka, letting it run across the surface nicely. Add a final sprinkle of cilantro for visual appeal. To serve, add a scoop of the Jeera Rice to your plate, spoon the silky dal right over it, and add a little extra tadka on top if desired. Serve with raw sliced red onion, green chilies, and lime wedges on the side.
