For Marination

  • 750 gramsChicken
  • 1 1/2 tablespoonGinger garlic paste
  • 1 teaspoonChilli powder
  • 1 teaspoonCoriander powder
  • 1/2 teaspoonTurmeric powder
  • 1 teaspoonSalt

For Fry

  • 2 tablespoonOil
  • 2Onion
  • 1 sprigCurry leaves
  • 2Tomato
  • 1/2 teaspoonSalt
  • 1 teaspoonChicken masala
  • 1/2 teaspoonGaram masala
  • 1 teaspoonPepper
  • 1/4 cupCoriander leaves

Step-by-Step Instructions

  1. 1.Marinate Chicken

    In a bowl, add 750 grams of chicken. Add 1 1/2 tablespoon of ginger garlic paste, 1 teaspoon of chili powder, 1 teaspoon of coriander powder, 1/2 teaspoon of turmeric powder, and 1 teaspoon of salt. Mix all the ingredients well with your hands until the chicken pieces are evenly coated. Let it marinate for 15 minutes.

  2. 2.Fry the Chicken

    Heat 2 tablespoons of oil in a pan over medium flame. Add the marinated chicken pieces to the hot oil. Fry for 5 minutes, stirring occasionally, until the chicken starts to change color. Cover the pan with a lid and cook for another 15 minutes on medium flame, allowing the chicken to cook through and the moisture to evaporate until it turns dry and slightly browned. Once cooked, remove the chicken from the pan and keep it aside.

  3. 3.Prepare the Masala Base

    In a separate pan (or the same pan after cleaning), heat 1 tablespoon of oil. Add 2 chopped onions and 1 sprig of curry leaves. Sauté the onions until they turn light brown and translucent. Add 2 chopped tomatoes, 1/2 teaspoon of salt, 1 teaspoon of chicken masala, 1/2 teaspoon of garam masala, and 1 teaspoon of pepper. Sauté this mixture for 3 minutes on medium flame, stirring continuously, until the tomatoes soften and the spices are well combined.

  4. 4.Combine and Finish

    Add the previously fried chicken pieces to the prepared masala base in the pan. Mix everything well, ensuring the chicken is thoroughly coated with the masala. Cook for 5 minutes on low flame, allowing the flavors to meld together. Finally, add 1/4 cup of fresh coriander leaves, mix well, and then switch off the flame. Your chicken fry is ready to serve.
