  1. Prepare and Marinate Chicken

    Wash and drain 300 gm boneless chicken cubes thoroughly. In a bowl, combine the chicken with 1 tbsp ginger garlic paste, salt (as per taste), 1 tsp black pepper, 1 tbsp chili powder, 1 tbsp Kashmiri chili, 4 tbsp fresh curd, and 2 pinches of red food color. Mix everything very well until the chicken pieces are evenly coated. Cover and keep aside for to .

  2. Add Flours and Mix

    After marination, add 3 tbsp rice flour and 3 tbsp cornflour to the chicken. Mix thoroughly with your hands until the chicken pieces are well coated with the flour mixture. Do not add any water; the moisture from the chicken and marinade should be sufficient.

    Heat sufficient oil for deep frying in a pan over medium flame. Once the oil is hot, carefully add the chicken pieces one by one, ensuring not to overcrowd the pan. Let the chicken fry undisturbed for on one side to allow the coating to set.
