Caramel Milk Pudding

Ingredients

Main Ingredients

  • 3 cupsMilk
  • 1/3 cupSugar (for caramel)
  • 1/3 cupSugar (for milk mixture)
  • 5Eggs
  • 1 tspVanilla essence
  • for garnishRoasted peanuts

Step-by-Step Instructions

  1. 1.Boil Milk

Pour 3 cups of milk into a pan. Place the pan on an induction cooker and turn it on to boil the milk. Wait until the milk boils vigorously, then remove it from the heat.

  2. 2.Caramelize Sugar

In a separate pan, add 1/3 cup of sugar. Heat the sugar over medium heat until it melts and caramelizes, stirring occasionally with a spatula. Continue heating until the sugar turns into a rich amber color and bubbles.

  3. 3.Combine Caramel and Milk

Carefully pour the hot caramel into the boiled milk. Stir the caramel into the milk until fully combined. The mixture will turn a light caramel color.

  4. 4.Add More Sugar and Boil

Add another 1/3 cup of sugar to the milk and caramel mixture. Stir until the sugar dissolves completely. Boil the milk mixture for 5 minutes.

  5. 5.Prepare Egg Mixture

Remove the milk mixture from the heat. Crack 5 eggs into a large mixing bowl. Whisk the eggs thoroughly until they are well combined and slightly frothy.

  6. 6.Combine Milk and Eggs

Slowly pour the hot milk mixture into the whisked eggs while continuously whisking to temper the eggs and prevent scrambling. Add 1 teaspoon of vanilla essence to the mixture and whisk until well incorporated.

  7. 7.Pour into Cups and Cover

Pour the prepared mixture evenly into 4 individual glass cups. Cover each glass cup tightly with aluminum foil.

  8. 8.Steam the Puddings

Place a paper towel at the bottom of a large pan. Carefully place the covered glass cups on top of the paper towel in the pan. Pour hot water into the pan, ensuring it reaches about halfway up the sides of the glass cups. Cover the large pan with a lid. Steam the puddings over medium heat for 10-15 minutes, or until a skewer inserted into the center comes out clean.

  9. 9.Chill and Serve

Remove the puddings from the pan and let them cool. Transfer the cooled puddings to the refrigerator and chill until completely set. Garnish with roasted peanuts before serving.
