Broccoli Almond Soup

Broccoli Almond Soup

Ingredients

  • 1 medium headBroccoli
  • 10-12 (soaked and peeled)Almonds
  • 8-10Cashews
  • 1 tbsp + 1 tspButter
  • 3-5 cloves (chopped)Garlic
  • 1/2 medium (chopped)Onion
  • 2-2.5 cupsWater
  • to tasteSalt
  • to tasteBlack Pepper
  • 1-2 tbsp (optional)Grated Cheese
  • 1/2 tspOregano
  • 1/2 tspRed Chilli Flakes

Step-by-Step Instructions

  1. 1.Prepare Broccoli

    Cut one medium head of broccoli into florets and wash them thoroughly in water.

  2. 2.Prepare Almonds

    Soak 10-12 almonds in hot water for a few minutes, then peel the skin off.

  3. 3.Chop Onion

    Finely chop half a medium onion.

  4. 4.Sauté Aromatics and Broccoli

    Heat 1 tablespoon of butter in a pan. Add 2-3 cloves of chopped garlic and sauté until fragrant. Then, add the chopped onion and cook until it softens, about 2-3 minutes. Add the washed broccoli florets to the pan. Add about 1/4 cup of water, cover, and cook until the broccoli becomes tender, about 5-7 minutes.

  5. 5.Add Nuts and Cook

    Add the peeled almonds and 8-10 cashews to the pan. Mix well and cook for another 1-2 minutes.

  6. 6.Blend into Paste

    Transfer the cooked broccoli mixture to a blender. Add about 1 cup of water and blend into a smooth, creamy paste.

  7. 7.Prepare Soup Base

    In the same pan, melt 1 teaspoon of butter and add 1-2 cloves of finely chopped garlic, sautéing until light golden. Pour the prepared broccoli and almond paste into the pan.

  8. 8.Season and Simmer

    Add 1-1.5 cups of water to adjust the soup consistency and mix well. Season with salt and black pepper to taste. Add 1-2 tablespoons of grated cheese (optional) and mix until melted. Sprinkle 1/2 teaspoon of oregano and 1/2 teaspoon of red chilli flakes. Mix all ingredients thoroughly and simmer for 2-3 minutes until the soup thickens slightly. Serve hot.
