Add 1 cup of Toor Dal and 8-10 green chilies to a pressure cooker. Add water, clean them thoroughly, then drain. Add 2-3 cups of fresh water, 1 tsp salt, and 1/2 tsp turmeric powder. Close the lid and pressure cook for 5-6 whistles until the dal is soft.
Once the pressure releases, open the cooker and mash the cooked dal and green chilies thoroughly with a hand masher until smooth.
Peel and chop 1 medium bottle gourd into 1-inch pieces. Chop 1 medium carrot into 1-inch pieces and 1 medium onion into large pieces. Set aside.
Take a small lemon-sized ball of tamarind, soak it in 1 cup of water for . Squeeze the tamarind to extract the pulp/juice and set aside.
Place a pan (or the same pressure cooker) on the stove. Add 2 tbsp oil. Once hot, add 1 tsp mustard seeds, 1 tsp cumin seeds, 3-4 dry red chilies, a few sprigs of curry leaves, and 4-5 crushed garlic cloves. until fragrant.
Add the chopped onions to the and until translucent. Then add the chopped carrots and bottle gourd pieces. Mix well.
Add 1 tsp salt, 1/2 tsp turmeric powder, 1 tsp red chili powder, and 1-2 tbsp sambar masala to the vegetables. Mix everything thoroughly, ensuring the spices coat the vegetables. Cook on a medium-low flame for , covering occasionally, until the vegetables are soft and the spices are well cooked.
Once the vegetables are soft, add the mashed toor dal mixture to the pan. Mix well. Then, pour in the tamarind extract. Add additional water as needed to achieve your desired sambar consistency. Bring the mixture to a boil.
Let the sambar for on a medium-low flame, allowing all the flavors to meld and the sambar to thicken slightly. Add a few sprigs of curry leaves and a handful of chopped coriander leaves. Mix gently and for another . Your delicious Bottle Gourd Sambar is ready to serve!
