Step-by-Step Instructions

Step 1: Roast Puffed Rice

Add 6 cups of puffed rice to a pot on low heat. Roast whilst mixing continuously until it easily crumbles when pressed, ensuring it becomes crispy.

Step 2: Combine Dry Ingredients

Transfer the roasted puffed rice to a large mixing bowl. Add 1/2 cup roasted and peeled peanuts, 1/2 cup boiled, peeled, and chopped potatoes, 1/2 cup finely chopped tomatoes, 1/2 cup finely chopped onions, 2 tablespoons peeled and finely chopped raw mango, 1/2 teaspoon salt (or to taste), 1/4 teaspoon red chili powder (or to taste), 1/4 cup peeled roasted chana (chickpea), 2 tablespoons masala chana (spicy fried split chickpea), and 4 crushed papdi/flat puri.

Step 3: Mix Well

Mix all the ingredients thoroughly until well combined.

Step 4: Add Chutneys and Garnish

Add some spicy green chutney (to taste), some red garlic chutney (to taste), and some sweet tamarind (imli) chutney (to taste) to the mixture. Then add 2 tablespoons of nylon sev/thin sev, 1/4 cup chopped cilantro, and 2 teaspoons lemon juice (or to taste).

Step 5: Final Mix and Serve

Mix everything well until all ingredients are evenly coated with the chutneys. Serve immediately to maintain crispiness. Garnish with some nylon sev, masala chana, peeled roasted chana, raw mango pieces, roasted peanuts, cilantro, a squeeze of lemon juice, and one papdi/flat puri.
