Follow each step to make the recipe successfully.
Add 2 cups of besan (gram flour) to a large mixing bowl. Then, add 1 cup of wheat flour, 1 teaspoon of cumin seeds, 1 large chopped onion, and 2 chopped green chilies. Season with 1 teaspoon of salt and 1 teaspoon of oil. Mix all ingredients well and start to form a dough. Finally, add 1 teaspoon of turmeric powder and continue until a smooth, firm dough is formed.
In a blender, add 1 chopped tomato, 2 green chilies, and a handful of fresh coriander leaves. Add 1 teaspoon of red chili powder, 1 teaspoon of cumin seeds, and 1/2 teaspoon of salt. Add a splash of water and blend until a smooth chutney is formed.
Take a small portion of the prepared dough and flatten it slightly. Apply a little oil to the dough ball and the rolling surface. Dust the dough with dry flour and roll it into a thin, round roti using a rolling pin. Repeat this process for the remaining dough portions.
Heat a tawa (griddle) over medium heat. Place one rolled roti on the hot tawa. Once small bubbles appear and the edges start to cook, apply a little ghee or oil to the top surface of the roti. Flip the roti and apply a little ghee or oil to the other side. Cook, pressing gently with a spatula, until both sides are golden brown and cooked through (approximately per side). Remove the cooked roti from the tawa and place it on a plate. Repeat the cooking process for the remaining rotis.
Serve the hot besan rotis with the freshly prepared chutney.
