Follow each step to make the recipe successfully.
Heat 1/4 cup of oil in a pan. Add 1 tsp of mustard seeds and 1/4 tsp of asafoetida. Stir until the mustard seeds splutter.
Add 4-5 finely chopped medium onions to the pan and mix well. Add 1 tsp of turmeric, 1-2 tsp of red chili powder, and salt as per taste. Mix all ingredients thoroughly and cook for until the onions become translucent.
Cover the pan and cook for to allow the flavors to meld. Then, add 1/2 cup of tamarind pulp and a handful (approximately 1/2 cup) of jaggery. Mix well until the jaggery starts to dissolve. Add 2-3 tablespoons of water, mix, and bring the mixture to a boil. Cover again and cook for another to release moisture and deepen the flavors.
Add 3-4 medium boiled and cubed potatoes to the curry. Mix gently to ensure the potatoes are well coated with the sauce. Cover and cook for to heat the potatoes through. The Batata Soong is now ready to serve immediately.
