Peel the ripe bananas and set them aside on a plate. The video shows 4-5 bananas being peeled.
Heat 2 tablespoons of ghee in a pan over medium heat. Once the ghee is hot, add 3 tablespoons of moong dal and stir continuously until it turns light golden brown and crispy.
Add 1 teaspoon of cumin seeds to the pan and let them splutter. Then, add 2-3 dry red chilies and a sprig of curry leaves. for about until fragrant.
Add 1/4 cup of grated coconut to the pan. Stir and for until the coconut is slightly heated through and fragrant, but not browned. the flame to low.
Carefully slice the peeled bananas directly into the pan, creating round or half-moon pieces of about 1/2 inch thickness. Ensure the bananas are evenly distributed among the mixture.
Dissolve salt to taste in 1/4 cup of water. Pour this salt water over the bananas in the pan. Stir gently to combine all ingredients.
Cover the pan with a lid and let the bananas on low heat for about . The will help cook the bananas until they are soft. Check periodically to ensure they don't stick to the bottom.
Once the bananas are soft and cooked through, remove the lid and give it a final gentle stir. The Banana Upkari is now ready to be served hot, optionally on a banana leaf.
