Ingredients

For Masala Puri Dough

  • 1 cupSuji (semolina)
  • 1 cupHot water
  • 1-2 mediumBoiled potatoes, mashed
  • 1 cupWhole wheat flour (atta)
  • 1 tspSalt
  • 1 tspRed chilli powder (lal mirch)
  • ½ tspTurmeric powder (haldi)
  • 1 tspCarom seeds (ajwain)
  • 1 tspCumin seeds (jeera)
  • A pinchAsafoetida (hing)
  • 1 tspKasuri methi
  • A handfulFresh coriander, finely chopped
  • 1 tbspOil
  • as requiredWater

Step-by-Step Instructions

  1. 1.Prepare Suji Mixture

    In a bowl, combine 1 cup suji and 1 cup hot water. Mix well with a spatula until thoroughly combined. Let the mixture rest for 5 minutes.

  2. 2.Add Remaining Dough Ingredients

    To the suji mixture, add 1-2 medium mashed boiled potatoes, 1 cup whole wheat flour, 1 tsp salt, 1 tsp red chilli powder, ½ tsp turmeric powder, 1 tsp cumin seeds, 1 tsp carom seeds, a pinch of asafoetida, 1 tsp kasuri methi, a handful of finely chopped fresh coriander, and 1 tbsp oil.

  3. 3.Knead the Dough

    Mix all the added ingredients thoroughly by hand. Gradually add water as needed to knead everything into a smooth dough. The dough should be neither too soft nor too hard.

  4. 4.Rest the Dough

    Cover the prepared dough with a cloth and let it rest for 5 minutes.

  5. 5.Roll the Puris

    Take a small portion of the dough and roll it out into a flat circular disc, similar to a normal roti. Ensure the rolled dough is slightly thicker than a regular roti.

  6. 6.Cut the Puris

    Use any round cutter, such as a steel cap, to cut the rolled dough into even circular puris.

  7. 7.Deep Fry the Puris

    Heat oil for deep frying in a pan. Once the oil is hot, carefully place a puri into the oil. Gently press the puri with a slotted spoon to help it puff up. Fry until the puri is golden brown and crispy on both sides.

  8. 8.Serve Hot

    Remove the fried puri from the oil and drain any excess oil. Serve the hot Masala Puris with Tamil Nadu Style Masala Baby Potatoes for a delicious meal.
