Step-by-Step Instructions

Step 1: Prepare the Flour

In a large mixing bowl, add 2 cups of whole wheat flour. Mix in 1/4 teaspoon of salt (optional).

Step 2: Form the Dough

Slowly mix in about 3/4 cup of warm water with your hands. Add only as much water as is needed to bring the dough together. If you need more, add just a teaspoon at a time.

Step 3: Knead the Dough

Once the dough comes together, knead it in the bowl for until it is smooth, pliable, and lightly springs back when you press an indent into it.

Step 4: Rest the Dough

Rub a bit of neutral oil in a clean bowl. Place the dough ball in the bowl, cover with a damp cloth, and let it rest for .

Step 5: Divide and Shape

After , gently knead the dough a couple of times. Slice the dough into at least 8 equal portions. Roll each portion into a smooth ball using your palm on a flat surface.

Step 6: Roll Out the Roti

While your pan heats over medium to medium-high heat, work with one ball of dough at a time, keeping the others covered. On a lightly floured surface, flatten a dough ball and roll it into a thin, even circle about 6 to 7 inches in diameter.

Step 7: Cook the Roti

Place the rolled-out roti on the hot, dry pan. Cook for about until you see the dough drying out and bubbling. Flip the roti to the second side and continue cooking for until the first side has nice brown spots.

Step 8: Puff and Finish

Flip the roti back and forth as needed. A great roti will start puffing up. If it doesn't, gently press the sides with a cloth to encourage it. Once cooked through, remove from the heat. The roti will deflate. Optionally, spread with vegan butter and keep covered while you repeat the process with the remaining dough.

Pro Tips

• For even softer roti, use traditional Atta flour, which is a more finely milled wholemeal flour.

• Ensure your pan is hot before placing the roti on it. This helps it cook quickly and puff up properly.

• If your roti isn't puffing up, gently press on the sides with a clean cloth or spatula to encourage steam to build up inside.

• Keep the finished roti covered in a cloth while you cook the rest to keep them warm and soft.

• While one roti is cooking, you can roll out the next one to create an efficient assembly line.
