  • 1/2 cup (chopped)Red capsicum
  • 1/2 cup (chopped)Green capsicum
  • 1/2 cup (shredded)Cabbage
  • 1/2 cup (chopped)Beans
  • 1 teaspoonSugar
  • 2 tablespoonsRed chili sauce
  • 1 tablespoonGreen chili sauce
  • 1 teaspoonDark soya sauce
  • to tasteSalt
  • 1 teaspoonPepper powder

Step-by-Step Instructions

  1. 1.Prepare Basmati Rice

    Wash 1 cup (150g) basmati rice 3-4 times until the water runs clear, rubbing gently to remove starch. Soak the washed rice in water for 30 minutes.

    In a cooker, add 2 liters of water, 1 teaspoon salt, 1/2 teaspoon oil, and 1/4 teaspoon lemon juice. Bring the water to a rolling boil. Drain the soaked rice and add it to the boiling water. Cook on medium flame until the rice is fully cooked but still firm (it should break slightly when pressed, not completely mash).

    Once cooked, drain the rice completely using a colander. Transfer the hot rice to a wide plate or tray and spread it out evenly. Let it cool completely for at least 2-3 hours. This step is crucial for achieving a non-sticky, fluffy fried rice texture.

    Heat 1 tablespoon of oil in a large wok or kadai on high flame. Add 1 chopped large onion, 5 chopped garlic cloves, 2 chopped green chilies, and 1 small piece of chopped ginger. Stir-fry on high flame for about 1-2 minutes until fragrant and slightly softened.

Continue to stir-fry on high flame for 3-4 minutes until the vegetables are cooked but still retain their crispness and vibrant color.
