Follow each step to make the recipe successfully.
Place clean jars and lids in boiling water to sterilize them. Keep them warm until ready to fill.
Slice 5 ripe bananas into a saucepan. Ideally, use yellow bananas without brown spots.
Pour one can of pineapple tidbits (including the juice) into the saucepan with the bananas.
Add 1/4 cup of ground sweetened coconut flakes to the mixture. Grinding the coconut helps it blend better.
Add 3 cups of sugar to the saucepan.
Add 3 tablespoons of lemon juice. Freshly squeezed lemon juice was used, but bottled lemon juice also works.
Stir all ingredients together. Turn the stovetop heat to medium-high (around an 8 on her stove) and bring the mixture to a full rolling boil. Stir occasionally to prevent boiling over.
Once the mixture reaches a full rolling boil, the heat to low-medium and let it for , stirring occasionally.
Carefully pour the hot monkey butter into the prepared jars using a funnel and a measuring spoon or ladle. Leave about 1/4 to 1/2 inch of headspace from the rim of the jar.
Wipe the rims of the jars with a damp paper towel to ensure no banana butter residue is present. Place the lids and rings on the jars. If canning, process according to water bath canning guidelines.
