Pound 60g of garlic in a mortar and pestle until roughly chopped. Heat vegetable oil in a pan over low heat. Add the pounded garlic and fry, stirring constantly, until crispy and golden brown. Remove the fried garlic from the oil and set aside in a bowl, retaining the oil for later use.

Heat vegetable oil in a pan over medium heat. Add the marinated pork ribs to the hot oil and fry, stirring occasionally, until they turn a rich brown color and are cooked through. Remove the fried pork ribs from the oil using a slotted spoon and drain excess oil.
Arrange the crispy garlic pork ribs on a serving plate, garnished with fresh lettuce and red chilies. Sprinkle the previously fried garlic over the pork ribs before serving.
