  • 60 gGarlic

For Pork Rib Marinade

  • 350 gPork rib
  • 1/2 tspWhite peppercorn
  • 15 gGarlic
  • 1 tspOyster sauce
  • 1 tspFish sauce
  • 1 tspSoy sauce

For Frying

  • as needed for deep fryingVegetable oil

Step-by-Step Instructions

  1. 1.Prepare the fried garlic

    Pound 60g of garlic in a mortar and pestle until roughly chopped. Heat vegetable oil in a pan over low heat. Add the pounded garlic and fry, stirring constantly, until crispy and golden brown. Remove the fried garlic from the oil and set aside in a bowl, retaining the oil for later use.

  2. 2.Prepare the pork rib marinade

    Pound 1/2 tsp of white peppercorn in a mortar and pestle. Add 15g of garlic to the mortar and pound together with the peppercorn until well combined. Place 350g of pork ribs in a mixing bowl. Add the pounded garlic and peppercorn mixture. Add 1 tsp of oyster sauce, 1 tsp of fish sauce, and 1 tsp of soy sauce to the pork ribs. Mix thoroughly to ensure the pork ribs are well coated with the marinade. Marinate the pork ribs for 15 minutes.

  3. 3.Fry the pork ribs

    Heat vegetable oil in a pan over medium heat. Add the marinated pork ribs to the hot oil and fry, stirring occasionally, until they turn a rich brown color and are cooked through. Remove the fried pork ribs from the oil using a slotted spoon and drain excess oil.

  4. 4.Serve

    Arrange the crispy garlic pork ribs on a serving plate, garnished with fresh lettuce and red chilies. Sprinkle the previously fried garlic over the pork ribs before serving.
