Sweet Corn & Spinach Pancakes (Patties)

Ingredients

  • 1 cupBoiled Sweet Corn
  • 1 mediumBoiled Potato
  • 1/4 cupChopped Spinach
  • 1/4 cupChopped Onion
  • 1/4 to 1/2 cupMaida (All-purpose flour)

  • 1/2 tspChilli Flakes
  • 1/2 tspPizza Seasoning
  • to tasteSalt
  • for cookingOil

Step-by-Step Instructions

  1. 1.Prepare the Base Mixture

    In a bowl, mash the boiled sweet corn and boiled potato together using a fork until well combined.

  2. 2.Add Vegetables and Flour

    Add the finely chopped spinach and onion to the mashed sweet corn and potato mixture. Then, add maida (all-purpose flour) for binding.

  3. 3.Form the Batter

    Pour in milk and a little water, mixing thoroughly to create a thin, smooth batter. Ensure the maida is just enough for binding and not excessive.

  4. 4.Season the Batter

    Add chilli flakes, pizza seasoning, and salt to the batter. Mix well to combine all the flavors.

  5. 5.Heat and Grease the Tawa

    Heat a tawa (griddle) over medium flame. Once hot, apply a thin layer of oil using a brush or spoon. You can also use ghee or butter.

  6. 6.Cook the Pancakes

    Spoon small portions of the batter onto the hot tawa to form small pancakes. Cook on medium flame. Once the top surface appears dry, carefully flip each pancake.

  7. 7.Brown Both Sides

    Add a little more oil around the edges of the pancakes. Cook both sides until they turn golden brown and are cooked through. Repeat with the remaining batter.

  8. 8.Serve and Pack

    Once cooked, remove the pancakes from the tawa and place them on a plate. Pack them in a lunchbox, optionally with a side of ketchup, for a delicious and easy meal.
