Step-by-Step Instructions

Follow each step to make the recipe successfully.

  1. Prepare the Batter Base

In a bowl, combine 1 cup semolina, 1/2 cup flattened rice, 2 tablespoons fresh coconut, 1/2 cup curd, and 1/2 cup water. Mix all ingredients well until combined. Let the mixture rest for to allow the semolina and flattened rice to soften.

  2. Blend to a Smooth Batter

Transfer the rested mixture into a blender. Add another 1/2 cup of water and blend until you achieve a smooth, pourable batter. Ensure the batter is not too thick or too thin.

  3. Add Vegetables and Seasoning

Pour the blended batter into a clean bowl. Add finely chopped onion, capsicum, grated carrot, finely chopped green chili (as per taste), and fresh chopped coriander leaves. Season with salt as per taste. Mix all the added ingredients thoroughly into the batter.

  4. Incorporate Baking Soda

Just before cooking, add 1/2 teaspoon of baking soda to the batter. Gently mix it in until just combined. Do not overmix.

  5. Cook the Dosa

Heat a tawa (griddle) on medium flame. Lightly grease it with oil using a brush. You can sprinkle a few drops of water to check if the tawa is hot enough; the water should sizzle and evaporate. Pour one ladleful of batter onto the hot tawa and lightly spread it into a thick, round dosa. Cook until the bottom side is well-cooked and turns golden brown. Then, carefully flip the dosa with a spatula and cook the other side until it is also golden and cooked through.

  6. Serve

Once cooked, transfer the dosa to a plate. Repeat the process for the remaining batter. Serve the healthy, soft, and spongy dosa hot with your favorite chutney, sambar, or yogurt.
