Remove the boiled vegetables from heat, drain them in a colander, and rinse under cold water. Press firmly with your hands to squeeze out all excess water. This is crucial for a firm filling.
In a bowl, combine the squeezed boiled peas, grated carrots, and grated cauliflower. Add 1 tablespoon of oil/ghee, salt to taste, 1/2 teaspoon ground black pepper, 1 teaspoon roasted cumin powder, 1 finely chopped green chili (optional), and finely chopped fresh coriander. Mix all ingredients well.
Take the grated boiled potatoes in a large bowl. Soak 4 bread slices in water, squeeze out the water completely, and crumble them into the potato mixture. Add salt to taste and 1 teaspoon amchur powder. Mix everything thoroughly by hand until well combined and smooth.
Take a small portion of the potato mixture and flatten it on your palm. Place a spoonful of the prepared vegetable filling in the center. Carefully bring the edges of the potato mixture together to seal the filling, then gently flatten and shape it into a round patty (tikki). Repeat this process for the remaining mixture and filling.
You can either shallow fry or deep fry the cutlets. **Shallow Frying:** Heat a tawa or non-stick pan with a little oil/ghee. Place the patties on the tawa and cook on medium heat, flipping occasionally, until golden brown and crispy on both sides. **Deep Frying:** Heat enough oil/ghee in a kadai or deep frying pan over medium heat. Carefully slide the patties into the hot oil and fry, turning occasionally, until they are golden brown and crispy all over. Remove and place on a paper towel to drain excess oil.
Serve the hot and crispy stuffed cutlets with tomato ketchup and green chutney. Garnish with a lemon wedge and fresh coriander.
To make burgers, slice burger buns horizontally and them lightly. On the bottom half of the bun, place a lettuce leaf, a tomato slice, and drizzle some mayonnaise.
