  1. Sauté Cumin Seeds

    Heat 1 tablespoon of oil in a pan. Once hot, add 1 teaspoon of cumin seeds and let them splutter for a few seconds.

  2. Cook Tomatoes and Chilies

    Add 3-4 chopped medium tomatoes to the pan. Stir well. Then add 2-3 green chilies and 1-2 red chilies. Continue to stir and cook for .

  3. Steam Vegetables

    Cover the pan with a lid and let the tomatoes and chilies and soften for about until they are pulpy.

  4. Add Herbs and Steam Again

    Remove the lid and add a sprig of curry leaves and 1/4 cup of chopped coriander leaves. Stir briefly, then cover the pan again and let it for another to infuse the flavors.

  5. Prepare Peanuts

    While the vegetables are , add 1/2 cup of roasted peanuts to a blender jar and grind them coarsely.

  6. Blend Chutney Ingredients

    Transfer the cooked tomato mixture from the pan into the blender jar with the ground peanuts. Add a 1/2 inch piece of tamarind, 1 teaspoon of salt (or to taste), and 1 tablespoon of coriander powder. Blend all ingredients until a smooth chutney is formed.

  7. Serve Chutney

    Pour the prepared tomato peanut chutney into a serving bowl. Enjoy it with dosa, idli, or rice.
