Follow each step to make the recipe successfully.
Take the large prawns and use kitchen scissors to trim off the legs and antennae. Carefully cut along the back of each prawn to butterfly it, removing the head and deveining it. Rinse thoroughly and pat dry.
On a banana leaf placed in a bowl, add 1.5 tablespoons of red chili powder, 0.5 teaspoon of turmeric powder, 0.5 teaspoon of salt, 1 tablespoon of ginger-garlic paste, and the juice from half a lemon. Mix all the ingredients thoroughly with your hand to form a smooth paste.
Take each butterflied prawn and generously apply the prepared spice paste all over, ensuring it's coated evenly on both sides and inside the cut. Place the prawns aside.
Heat a frying pan on medium heat. Place a banana leaf in the pan and drizzle about 2 tablespoons of cooking oil over it. Carefully place the prawns on the oiled banana leaf in the pan. Sprinkle 0.25 teaspoon of black pepper powder over the prawns.
Cook the prawns for approximately on one side until they turn bright orange and slightly charred. Sprinkle some fresh coriander leaves over the cooking prawns. Using tongs, carefully flip the prawns and cook for another on the other side until fully cooked and aromatic.
Once cooked, remove the prawns from the pan and arrange them on a serving plate. Garnish with additional fresh coriander leaves, sliced onions, and lemon wedges. Serve hot.
