Step-by-Step Instructions

  1. 1.Heat the Tawa

    Ensure the tawa (griddle) is hot and lightly smoking, indicating it's ready for the dosa batter.

  2. 2.Spread the Dosa Batter

    Pour one ladle (approximately 1/2 cup) of dosa batter onto the center of the hot tawa. Quickly spread the batter in a circular motion using the back of the ladle, moving outwards from the center to form a thin, even layer.

  3. 3.Add Onion-Chilli Paste

    Once the dosa batter is spread, add 1-2 tablespoons of onion-chilli paste onto the surface of the dosa.

  4. 4.Spread the Paste and Cook

    Using a spatula, gently spread the onion-chilli paste evenly over the dosa. Allow the dosa to cook for approximately 2-3 minutes, or until the edges turn golden brown and crispy, and the center is cooked through. You may add a teaspoon of oil or ghee around the edges to help it crisp up.

  5. 5.Fold and Serve

    Once cooked, use a spatula to gently fold the dosa in half. Carefully lift the folded dosa from the tawa and transfer it to a serving plate.
