Heat 3 tablespoons of oil in a pressure cooker. Add the sliced onion and until it turns translucent, about .
Add 1 tablespoon of ginger garlic paste, 1/2 teaspoon of turmeric powder, and 1 teaspoon of salt to the onions. Mix well and cook for until the raw aroma of ginger garlic paste disappears.
Stir in 1 tablespoon of green chilli paste and mix thoroughly with the onion and spice mixture.
Add the cleaned and cut mutton butt (tripe/offal) to the pressure cooker.
Mix the mutton butt with the spices. Then, add 1 teaspoon of black pepper powder and 1 tablespoon of red chilli powder. Mix well to ensure the meat is evenly coated with the spices.
Pour in 2 cups of water, ensuring it just covers the meat. Add 2 bay leaves and stir everything together.
Close the pressure cooker lid and cook for 4-5 whistles or until the mutton butt is tender, which typically takes about on medium heat. Allow the pressure to release naturally.
Once the pressure is released, open the cooker. Stir in 1/4 cup of fresh chopped coriander leaves. Mix well and serve the spicy mutton butt curry hot with your choice of rice or bread.
