  • 1 tbspGinger Garlic Paste
  • 1 cupGrinded Onion Paste
  • 1 tspTurmeric Powder
  • 2 tbspChilli Powder
  • 1 tspSalt
  • 1/2 cupWater
  • for garnishCoriander Leaves

For Grinding Masala

  • 1/4 cupDry Coconut
  • 1 inch pieceCinnamon
  • 4-5Cloves
  • 1 tbspCoriander Seeds
  • 1 tspCumin Seeds
  • 2-3 podsCardamom

Step-by-Step Instructions

  1. 1.Prepare the Ground Masala

    Dry fry the dry coconut, cinnamon, cloves, coriander seeds, cumin seeds, and cardamom in an empty pan without oil until fragrant. Transfer to a mixer grinder and grind into a fine powder.

  2. 2.Sauté Aromatics

    Heat a pan and add 2 tablespoons of oil. Once hot, add 1 tablespoon of ginger garlic paste and sauté until fragrant. Then, add 1 cup of grinded onion paste and sauté well until it turns golden brown and the oil begins to separate from the mixture.

  3. 3.Add Spices and Chicken

    To the sautéed aromatics, add 1 teaspoon of turmeric powder and mix well. Next, add 2 tablespoons of chilli powder and mix thoroughly. Add 1 teaspoon of salt and combine. Add the chicken pieces to the pan and mix well with the masala until the chicken is coated. Then, add the freshly ground masala prepared in Step 1 and mix everything together.

  4. 4.Cook the Curry

    Pour in approximately 1/2 cup of water, stir to combine all ingredients, and then cover the pan. Cook on medium heat until the chicken is tender and fully cooked, and the oil separates from the curry, indicating it's done.

  5. 5.Garnish and Serve

    Once cooked, garnish the Spice Chicken Curry with fresh coriander leaves and serve hot.
