  1. Prepare Snake Gourd and Lentils

    Wash and chop the snake gourds into small cubes. In a pressure cooker, combine the washed lentils, chopped snake gourd, turmeric powder, cumin seeds, and salt. Add enough water to cover the ingredients.

  2. Pressure Cook

    Close the pressure cooker and cook for 2-3 whistles or until the snake gourd and lentils are tender. Set aside.

  3. Prepare Coconut Paste

    In a blender, combine the chopped coconut, green chilies, small onions, curry leaves, cumin seeds, and garlic cloves. Grind to a fine paste, adding a little water if necessary.

  4. Prepare Tempering

    In a separate pan, heat cooking oil. Add mustard seeds and let them splutter. Then add urad dal and dry red chilies. until the urad dal turns golden brown. Add curry leaves and for a few seconds.

  5. Combine and Simmer

    Pour the cooked snake gourd and lentil mixture into the pan with the . Add the ground coconut paste. Mix well and bring to a gentle . Cook for , stirring occasionally, allowing the flavors to meld and the curry to thicken slightly. Serve hot with rice.
