Follow each step to make the recipe successfully.

  1. Prepare Rice and Dal

    Take 1 cup rice, 1/2 cup toor dal, and 1/4 cup masoor dal in a bowl. Wash them thoroughly and soak them in water for . Also, soak a small piece of tamarind in water separately.

  2. Combine Ingredients in Pressure Cooker

    After , drain the soaked rice and dals and transfer them to a pressure cooker. Add sliced carrots, onions, drumsticks, tomatoes, green beans, and brinjal to the cooker.

  3. Add Spices and Water

    To the cooker, add 1 tablespoon sambar powder, a few fenugreek seeds, 1 tablespoon red chili powder, 1/2 teaspoon turmeric powder, and 1 teaspoon salt. Pour in the soaked tamarind along with its water. Add 5-6 cups of water to the mixture. Stir everything well to combine.

  4. Pressure Cook the Sambar Rice

    Close the pressure cooker with its lid. Cook on low flame until 3 whistles are released. Once cooked, turn off the flame and allow the to release completely before opening the lid.

  5. Mash and Adjust Consistency

    Open the pressure cooker. Carefully remove the drumstick pieces and set them aside on a plate. Using a smasher, mash the cooked rice and dal mixture until it reaches a smooth, consistent texture. Add more water if needed to achieve your desired consistency and mix well.

  6. Simmer with Drumsticks

    Add the reserved drumstick pieces back into the mashed sambar rice. Mix gently and let it on low flame for to allow the flavors to meld.

  7. Prepare Tempering

    While the sambar rice , heat 2-3 tablespoons of oil in a separate small pan. Once the oil is hot, add 1 teaspoon cumin seeds, 1 teaspoon mustard seeds, 5-6 peeled garlic cloves, 3-4 dry red chilies, and 2-3 slit green chilies. Fry until aromatic. Then add a pinch of asafoetida, a sprig of curry leaves, and 1/2 teaspoon red chili powder. Fry for a few seconds until the curry leaves crisp up.

  8. Combine and Serve

    Pour the prepared over the sambar rice in the pressure cooker. Mix everything thoroughly. Taste and adjust salt if required. Turn off the stove. Serve the hot and delicious single pot sambar rice on a plate.
