Shrimp Fried Rice Recipe – Asian Style

Ingredients

For the Rice

  • 1-2 tbspButter
  • 1 (diced)Onion
  • 1 tspCurry powder
  • 2 cupsWashed rice
  • 1-2 cupsChicken broth
  • 1 cupWater
  • to tasteSalt

For the Stir-fry

  • 1-2 tbspOil
  • 1 lbShrimp
  • 1/2 tspGarlic paste
  • 1 tspBouillon powder
  • 1 (diced)Onion
  • 5Eggs
  • 1 (diced)Green bell pepper
  • 3 (diced)Mini bell peppers (red, orange, yellow)
  • 1 cupGreen peas
  • 1 cup (diced)Carrots
  • 1/2 tspWhite pepper
  • 1/2 tspOregano leaves
  • 1-2 tbspSoy sauce
  • 2-3 stalks (chopped)Green onion

Step-by-Step Instructions

  1. 1.Cook the Rice Base

    Add 1-2 tablespoons of butter to a pot and melt it over medium heat.

  2. 2.Sauté Aromatics for Rice

    Add one diced onion and 1 teaspoon of curry powder to the melted butter. Sauté until the onion is tender and fragrant.

  3. 3.Toast the Rice

    Add 2 cups of washed rice to the pot and toast it for 2-3 minutes, stirring occasionally, until slightly golden.

  4. 4.Add Liquids and Seasoning to Rice

    Pour in 1-2 cups of chicken broth and 1 cup of water. Add salt to taste and stir everything together.

  5. 5.Cook the Rice

    Cover the pot tightly with aluminum foil and a lid. Cook on low heat for 10-15 minutes, or until all the liquid is absorbed and the rice is tender.

  6. 6.Fluff the Rice

    Once cooked, remove the lid and foil, and gently fluff the rice with a spoon or fork.

  7. 7.Prepare the Shrimp

    In a separate pan, heat 1-2 tablespoons of oil over medium-high heat.

  8. 8.Cook the Shrimp

    Add 1 lb of shrimp, 1/2 teaspoon of garlic paste, and 1/2 teaspoon of bouillon powder to the hot oil. Cook for 2-3 minutes, stirring until the shrimp turn pink and are slightly browned. Remove the cooked shrimp from the pan and set aside.

  9. 9.Sauté Onion for Stir-fry

    Add the second diced onion to the same pan (with any remaining oil/juices) and cook until tender.

  10. 10.Scramble the Eggs

    Crack 5 eggs directly into the pan with the tender onions. Scramble them until fully cooked.

  11. 11.Add Vegetables

    Add the diced bell peppers (green and mini), 1 cup of green peas, and 1 cup of diced carrots to the pan. Stir to combine with the eggs and onions.

  12. 12.Season the Vegetables

    Sprinkle in the remaining 1/2 teaspoon of bouillon powder, 1/2 teaspoon of white pepper, and 1/2 teaspoon of oregano leaves. Cook for 2-3 minutes, stirring occasionally.

  13. 13.Add Soy Sauce

    Pour 1-2 tablespoons of soy sauce over the vegetables and eggs, mixing well.

  14. 14.Combine with Shrimp

    Return the cooked shrimp to the pan with the vegetables and eggs. Cook for a few more minutes to heat through.

    Add the cooked rice to the pan with the shrimp, eggs, and vegetables. Mix everything thoroughly until well combined and heated through.
