Follow each step to make the recipe successfully.
Pour 1 litre milk into a pot. Stir continuously with a spatula to prevent it from sticking to the bottom of the pot.
Once the milk comes to a boil, add 1/4 cup sugar and 1/2 tsp cardamom powder. Stir well to combine and continue to cook on low heat until the milk thickens slightly.
Peel 1/2 kg sweet potatoes one by one using a peeler. Immediately chop them into small, bite-sized pieces and place them in a bowl of water to prevent them from oxidizing and turning black.
Wash the chopped sweet potatoes thoroughly with 2-3 changes of water until the water runs clear. Drain them completely using a colander and then spread them out on a clean cloth to dry any excess moisture.
In a separate pot, add 1/4 cup homemade ghee and let it melt and heat up. Add the dried sweet potato pieces to the hot ghee and fry them lightly, stirring with a spatula, until they are slightly golden and tender.
Pour the previously boiled and flavored milk mixture into the pot with the fried sweet potatoes. Mix everything well with a spatula and continue to cook on low heat, stirring occasionally, until the kheer thickens to a desired consistency.
Once the kheer has thickened and the sweet potatoes are very soft, use a masher to lightly mash the sweet potatoes directly in the pot. Continue to stir and cook for a few more minutes until the kheer achieves a creamy and smooth texture.
Transfer the prepared kheer into a serving dish. Garnish generously with chopped pistachios. Serve warm or chilled.
