Follow each step to make the recipe successfully.
In a bowl, combine 1 cup of semolina with 1 cup of water. Add 2-3 tablespoons of finely chopped onion, 2-3 tablespoons of finely chopped capsicum, 1/2 teaspoon of salt (or to taste), and 1/2 teaspoon of crushed red chili (or to taste). Mix all ingredients thoroughly until well combined. The batter should be of pouring consistency.
In a separate small bowl, crack one egg. Add a pinch of salt and some chopped coriander leaves. Beat the egg mixture well with a fork or spoon until smooth.
Heat a non-stick pan over low heat and lightly grease it with oil. Pour a ladleful of the semolina batter onto the pan and spread it evenly to form a thin, round tortilla. Allow it to cook for a minute or until the edges start to set.
Once the first side of the tortilla is partially cooked, use a brush to apply a thin layer of the beaten egg mixture over its surface. Carefully flip the tortilla to cook the other side.
After flipping, immediately apply another thin layer of the beaten egg mixture to the newly exposed side of the tortilla using the brush. Continue to cook on low heat until both sides are golden brown and cooked through, about per side.
Once cooked, remove the semolina tortilla from the pan. Repeat the process for the remaining batter. Serve the soft and healthy semolina tortillas warm.
