    Prepare Spinach Puree

    Start by fresh spinach leaves in boiling water for . Immediately transfer the spinach to ice-cold water to stop the cooking process and preserve its vibrant green color. Then, blend the spinach into a smooth, vibrant green puree. Keep it aside.

    Prepare Masala Base

    In a hot pan, add 4 tablespoons of oil. Once hot, add 2 tablespoons of coriander seed powder and 2 teaspoons of red chilli powder. for a few seconds until fragrant.

    Add Aromatics

    Add the onion paste and it for a bit until it starts to brown. Then, add ginger garlic paste and cook the mixture until the oil begins to separate from the masala, indicating it's well cooked.

    Cook Chicken

    Add 1 kg of boneless chicken pieces to the pan. Give it a good mix to coat the chicken with the masala. Season with salt to taste.

    Add Tomato Puree

    Pour in 1 cup of tomato puree. Mix well and let the chicken in the tomato-masala mixture until it is perfectly cooked and tender.

    Final Spices and Spinach

    Sprinkle in 2 teaspoons of garam masala. Stir well. Then, add the prepared spinach puree to the chicken. Bring the entire mixture to a gentle boil, ensuring all ingredients are well combined and heated through.

    Garnish and Serve

    Top the Saag Chicken with a small dollop of butter. Your rich and creamy Saag Chicken is ready to be served hot.
