Chilli Oil Mixture

  • 3-4 tbspOil
  • 1 tbspKashmiri chilli powder

Chicken Marinade

  • 1 kgBone-in chicken pieces
  • 1 cupYoghurt
  • 2 tbspLime juice
  • 1 tspSalt
  • 1 tbspGinger garlic paste
  • allChilli oil mixture

Cooking

  • 1 tbspGhee
  • 1 tspCumin powder
  • 1/2 tspTurmeric powder
  • 1 tspRed chilli powder
  • 1.5 tspCoriander powder

Garnish

  • 1/4 cupChopped red onions
  • 1/4 cupChopped coriander

Step-by-Step Instructions

  1. 1.Prepare Chilli Oil Mixture

    In a bowl, combine oil and Kashmiri chilli powder. Mix well until no lumps are found and the mixture is smooth.

  2. 2.Marinate Chicken

    In a large bowl, add bone-in chicken pieces, yogurt, lime juice, salt, and ginger garlic paste. Pour in the prepared chilli oil mixture. Mix everything thoroughly until the chicken is well combined with the marinade. Let it sit for 5 minutes.

  3. 3.Cook Marinated Chicken

    Heat ghee in a pan over medium heat. Transfer the marinated chicken into the heated pan. Cook for 5 minutes, stirring frequently, until the chicken starts to change color.

  4. 4.Add Spices and Finish Cooking

    Add cumin powder, turmeric powder, red chilli powder, and coriander powder to the chicken. Give it a good mix and let it cook for 10 minutes on medium heat until all the water dries up and the gravy thickens. If you prefer a thicker gravy, you can add a bit of water.

  5. 5.Garnish and Serve

    Finish the chicken masala by garnishing with chopped red onions and fresh chopped coriander. Serve hot with naan or rice.
