Ingredients

For the Cake

  • 1/2 cupOil
  • 1 cupSugar
  • 1/2 cupCurd
  • 1 tspVanilla Essence
  • 1.5 cupsAll-purpose flour (Maida)
  • 1 tspBaking Powder
  • 1/2 tspBaking Soda
  • 1/2 cupMilk

For the Rasmalai Milk

  • 2 cupsFull-fat Milk
  • a pinchSaffron Strands
  • 1/2 cupCondensed Milk
  • 1/2 tspCardamom Powder
  • 1/4 cupHeavy Cream

For Whipped Cream & Garnish

  • 1 cupHeavy Cream (Chilled)
  • 2 tbspPowdered Sugar
  • 2 tbspChopped Pistachios
  • a fewSaffron Strands
  • for garnishDried Rose Petals

Step-by-Step Instructions

  1. 1.Prepare the Cake Batter (Wet Ingredients)

    In a large bowl, combine 1/2 cup oil, 1 cup sugar, 1/2 cup curd, and 1 tsp vanilla essence. Whisk thoroughly until the mixture is well combined and smooth.

  2. 2.Add Dry Ingredients and Milk

    To the wet mixture, add 1.5 cups all-purpose flour (maida), 1 tsp baking powder, and 1/2 tsp baking soda. Pour in 1/2 cup milk and whisk everything together until a smooth, lump-free batter is formed. Ensure not to overmix.

  3. 3.Bake the Cake

    Pour the cake batter into a greased and lined baking pan. Preheat your OTG to 180°C (350°F). Place the cake pan inside and bake for approximately 30-35 minutes, or until a toothpick inserted into the center comes out clean. The illuminated chamber of the Usha OTG allows you to monitor baking without opening the door. Once baked, remove from the oven and let it cool completely in the pan.

    In a saucepan, pour 2 cups full-fat milk. Add a pinch of saffron strands, 1/2 cup condensed milk, and 1/2 tsp cardamom powder. Bring the mixture to a boil, then reduce heat and simmer for 10-15 minutes, stirring occasionally, until it slightly thickens and the flavors meld. Let it cool down completely.

  5. 5.Finish the Rasmalai Milk

    Once the rasmalai milk has cooled, strain it to remove any cardamom pods or saffron strands if desired. Stir in 1/4 cup heavy cream and whisk until well combined. Keep it chilled.

  6. 6.Whip the Cream

    In a clean, chilled bowl, pour 1 cup of cold heavy cream. Using an electric hand mixer (like the Usha Hand Mixer), whip the cream on medium-high speed until it forms stiff peaks. You can add 2 tablespoons of powdered sugar for sweetness if desired.

  7. 7.Assemble the Tres Leches Cake

    Once the baked cake is completely cool, use a toothpick or fork to prick holes all over its surface. Generously pour the prepared and chilled rasmalai milk over the cake, ensuring it soaks into all the holes. Let the cake absorb the milk for at least 30 minutes, or preferably chill for a few hours in the refrigerator.

    Cut the soaked cake into desired pieces. Transfer one piece to a serving plate. Pipe or spread a generous amount of whipped cream on top of the cake. Garnish with chopped pistachios, a few saffron strands, and dried rose petals.
