  • 2-3 tablespoons, finely choppedOnion
  • 1, finely choppedGreen Chili
  • 0.5 teaspoonGarlic Powder
  • 1 teaspoonRed Chili Powder
  • 1 cupAll-purpose Flour (Maida)
  • 0.5 teaspoon (or to taste)Salt
  • 0.25 teaspoonTurmeric Powder
  • 0.5 teaspoonCrushed Coriander
  • 1 tablespoon (for batter) + as needed for cookingCooking Oil
  • Approximately 1 cup (as needed for batter consistency)Water
  • As needed, choppedFresh Coriander

Step-by-Step Instructions

  1. 1.Prepare the Potato Base

Take one large boiled potato and grate it into a mixing bowl. Ensure the potato is at room temperature before grating.

  2. 2.Add Aromatics and Spices

To the grated potato, add 2-3 tablespoons of finely chopped onion and 1 finely chopped green chili. Then, add 0.5 teaspoon of garlic powder and 1 teaspoon of red chili powder.

  3. 3.Incorporate Flour and Seasonings

Add 1 cup of all-purpose flour (maida) to the mixture. Season with 0.5 teaspoon of salt and 0.25 teaspoon of turmeric powder. Also, add 0.5 teaspoon of crushed coriander.

  4. 4.Add Oil and Water to Form Batter

Add 1 tablespoon of cooking oil to the dry ingredients. Gradually add approximately 1 cup of water while whisking continuously to form a smooth, lump-free liquid batter. The consistency should be neither too thick nor too thin.

  5. 5.Add Fresh Coriander

Once the batter is smooth, add a desired amount of finely chopped fresh coriander for flavor and garnish. Mix well until evenly distributed.

  6. 6.Cook the Paratha - First Side

Heat a non-stick pan or tawa over medium-low heat. Lightly grease the pan with a brush. Pour a ladleful of the liquid batter into the pan and spread it evenly to form a round paratha. Let it cook for a few seconds until the edges start to lift and the paratha releases from the pan.

  7. 7.Cook the Paratha - Second Side

Carefully flip the paratha to the other side using a spatula. Optionally, brush a little oil, butter, or ghee on the cooked side. Cook until golden brown and crispy on both sides.

  8. 8.Serve

Remove the cooked paratha from the pan. Repeat the process for the remaining batter. Serve hot with your favorite chutney, pickle, or yogurt.
