In a bowl, mash 5-6 boiled potatoes thoroughly using a potato masher until smooth.
Add 1/4 cup of finely chopped green capsicum, 1/4 cup of finely chopped red bell pepper (optional), and 1/4 cup of boiled corn to the mashed potatoes.
Season the mixture with salt to taste, 1/2 teaspoon of black pepper, 1 teaspoon of chaat masala, 1/2 cup of finely chopped coriander leaves, and 1 teaspoon of mixed herbs. You can also add some chili flakes if desired for extra spice.
Mix all the ingredients well using a fork or your hands until everything is evenly combined and forms a uniform mixture.
Take bread slices and generously spread the prepared potato mixture on one side of each slice.
Grease your sandwich toaster or grill pan with butter or oil using a brush.
Place the bread slices on the greased toaster with the potato mixture side facing down. Then, grease the top part of the bread slices with some butter or oil. Close the toaster and grill until the sandwiches are golden brown and crispy, with visible grill marks.
Once grilled, carefully remove the potato sandwiches from the toaster. Cut them diagonally and serve hot.
