  1. Boil Potatoes

    Place 4-5 medium potatoes (some whole, some halved) in a pressure cooker with water. Cook until tender and easily mashed.

  2. Prepare Aromatics

    Finely chop 2 small onions and 1 small tomato. Crush 4-5 cloves of garlic and a 1-inch piece of ginger.

  3. Combine Ingredients

    In a large bowl, mash the boiled potatoes. Add the chopped onions, chopped tomatoes, and crushed ginger-garlic to the mashed potatoes.

  4. Add Flour and Spices

    Add 3/4 cup of chickpea flour (besan) to the potato mixture. Then, add 1/2 tsp turmeric powder, 1 tsp red chili powder, 1 tsp cumin powder, 1 tsp coriander powder, and salt to taste.

  5. Mix Thoroughly

    Mix all the ingredients together thoroughly until a uniform, thick batter or dough-like consistency is formed.

  6. Pan-Fry Fritters

    Heat 2-3 tablespoons of cooking oil in a flat pan or griddle over medium heat. Take small portions of the potato mixture, flatten them into round patties, and place them on the hot griddle. Fry for on each side until golden brown and crispy.

  7. Serve

    Once cooked, remove the potato fritters from the pan. Serve hot with ketchup or your preferred chutney.
