Repeat the water dipping process by placing the chicken back into the strainer and dipping it into water.
For the final coating, transfer the chicken pieces back to the dry mix and dust them thoroughly for the third time. This multi-layer coating will give the popcorn chicken its characteristic crispy texture.
Heat cooking oil in a deep pan or pot. Once the oil is hot, carefully add the coated chicken pieces in batches. Deep fry until they are golden brown and crispy, which should take approximately per batch.
