  • 1/4 cupPeanuts
  • 1 sprigCurry Leaves
  • 1/2 tspTurmeric Powder
  • 1 cupPoha (Flattened Rice)
  • 1 tsp (to taste)Salt
  • 1/2 tsp (to taste)Sugar

Step-by-Step Instructions

  1. 1.Prepare the vegetables

    Finely chop one medium red onion, 2-3 green chilies, a 1-inch piece of ginger, and 2 tablespoons of coriander leaves. Place them on a plate.

  2. 2.Heat oil and temper spices

    Turn on the gas stove and place a pan on it. Add 2-3 tablespoons of cooking oil to the pan. Once hot, add 1 teaspoon of mustard seeds and 1/4 cup of peanuts. Stir and fry until the peanuts are lightly roasted.

  3. 3.Sauté aromatics and onions

    Add the chopped ginger, green chilies, and one sprig of curry leaves to the pan. Sauté for a few seconds. Then, add the finely chopped red onion and stir until the onions become translucent, about 1-2 minutes.

  4. 4.Add turmeric

    Sprinkle 1/2 teaspoon of turmeric powder into the pan and mix well with the sautéed ingredients.

  5. 5.Prepare and add poha

    Quickly wash 1 cup of poha (flattened rice) under running water in a bowl. Drain the excess water by gently squeezing the poha. Add the drained poha to the pan with the sautéed ingredients.

  6. 6.Season and finish

    Add 1 teaspoon of salt and 1/2 teaspoon of sugar to the poha. Sprinkle the chopped coriander leaves over the mixture. Stir everything gently until all ingredients are well combined and the poha is heated through, about 1-2 minutes.

    Transfer the prepared poha to a plate and serve immediately.
