Add the scrambled eggs and cashews to the fried rice. Mix well. Then, add the cooked shrimp and the pineapple chunks. Stir gently to combine all ingredients.
Finally, add the cherry tomatoes, chopped green parts of the spring onions, and fresh cilantro to the fried rice. Stir briefly for about to , then turn off the heat. Spoon the pineapple fried rice into the hollowed-out pineapple halves for a beautiful presentation.
