Step-by-Step Instructions

Step 1: Prepare the Marinade

In a large mixing bowl, combine hung curd, ginger-garlic paste, salt, turmeric powder, garam masala, coriander powder, Kashmiri red chilli powder, chaat masala, kasuri meethi (crushed), carom seeds (crushed), besan, mustard oil, and lemon juice.

Step 2: Mix the Marinade

Whisk all the marinade ingredients together until they form a smooth, lump-free paste.

Step 3: Marinate Paneer and Vegetables

Cut the paneer into cubes. Dice the bell peppers, deseed and dice the tomato, and separate the onion into large petals. Add all the paneer and vegetables to the prepared marinade. Mix gently to ensure everything is well-coated. Cover the bowl and let it marinate for a minimum of 30 minutes.

Step 4: Air Fry the Paneer Tikka

Preheat the air fryer to 185°C. Line the air fryer tray with a perforated liner. Arrange the marinated paneer and vegetables in a single layer. Air fry at 185°C for 10 minutes until cooked through and slightly charred on the edges.

Step 5: Cook the Parathas

While the paneer tikka is in the air fryer, cook the lachha parathas on a hot tawa with ghee until they are golden brown and crispy on both sides.

Step 6: Assemble the Rolls

Place a cooked paratha on a plate. Arrange a generous amount of the air-fried paneer tikka along the center. Drizzle with green chutney to your liking.

Step 7: Serve

Carefully roll the paratha to enclose the filling. You can secure it with a toothpick. Serve the paneer tikka rolls immediately while they are hot.

Pro Tips

Crush Kasuri Methi and Carom seeds between your palms before adding to the marinade to release more aroma.

Using a perforated air fryer liner makes for easier cleanup and prevents the food from sticking.

Ensure the paneer and vegetables are arranged in a single layer in the air fryer for even cooking.

If you don't have hung curd, you can use regular thick curd, but the marinade might be slightly runnier.

The paneer tikka filling can also be used to make delicious sandwiches.

Recipe Variations

Use regular roti or chapati instead of lachha paratha for a lighter version.

Add other vegetables like zucchini or mushrooms to the marinade.

For a vegan version, use tofu instead of paneer and a plant-based yogurt for the marinade.
