Step-by-Step Instructions

  1. 1.Grocery Shopping

Visit Iqbal Foods to purchase fresh herbs like mint, coriander, green onions, mangoes, juices, and various meat products including chicken mince for lasagne, chicken for biryani, and meat for nihari/paya. Also, pick up personal care items and other groceries.

  2. 2.Prepare Chicken Mince for Lasagne

In a pan, heat oil or butter and sauté garlic and ginger paste. Add the ground chicken mince and cook until it changes color. Season with salt, black pepper, and red chili powder. Stir well, then add tomato sauce or paste and simmer until the mince is fully cooked and the sauce thickens. Set aside to cool.

  3. 3.Prepare Chicken Nihari

Simmer the chicken in a prepared Nihari gravy (details of initial preparation not shown, but mentioned to be done by husband). In a separate small pan, prepare a tempering (tarka) by heating oil and frying dried red chilies and curry leaves until fragrant. Pour the tempering over the simmering Nihari.

  4. 4.Prepare Strawberry Delight Base

Crush Lotus biscuits (or digestive biscuits) in a food processor until coarse crumbs. Mix the crushed biscuits with melted butter until well combined. Press this mixture firmly into the bottom of serving dishes to form the base. Refrigerate to set.

  5. 5.Prepare Strawberry Delight Filling

In a large bowl, whip cold whipping cream until soft peaks form. In another bowl, combine cream cheese and condensed milk, mixing until smooth. Dissolve one packet of strawberry jelly in 1/4 cup of hot water, then add it to the cream cheese mixture. Incorporate pineapple chunks and fresh strawberries (if using). Gently fold the whipped cream into the cream cheese and jelly mixture until just combined. Pour this pink mixture over the chilled biscuit base in the serving dishes. Refrigerate overnight or for at least 4 hours to allow it to set completely. Garnish with fresh strawberry slices before serving.

  6. 6.Prepare Mint Chutney (Raita)

Blend fresh mint leaves, fresh coriander leaves, green chilies, and garlic cloves until a smooth paste forms. Pour this blended mixture into a container of yogurt. Mix well. Cover and refrigerate until serving.

  7. 7.Assemble and Steam Chicken Biryani

Layer cooked basmati rice with the prepared chicken curry. Add layers of lemon wedges, tomato slices, fried onions, and fresh coriander. Optionally, add sliced boiled eggs. Repeat layers as desired. Cover the pot tightly with foil and a lid, then steam (dum) on low heat until the flavors meld and the rice is perfectly cooked.

  8. 8.Final Dinner Setup

Arrange the prepared dishes on the serving table. Place the Chicken Nihari, Chicken Biryani, Special Lasagne, and Paya (prepared by husband) along with the Strawberry Delight and Mint Chutney. Set up plates, cutlery, napkins, and drinks for guests.
