Easy Mutton Curry with Potatoes in Pressure Cooker

Ingredients

For Mutton Marination

  • 1 kgMutton
  • 1 tspSalt
  • 1 tspTurmeric powder
  • 1 tbspMustard oil

For Onion Ginger Garlic Paste

  • 2 inch pieceGinger
  • 15-20 clovesGarlic
  • 3 medium, slicedOnion
  • as neededWater

For Tomato Cashew Paste with Whole Spices

  • 1 medium, choppedTomato
  • 5-6Cashew nuts
  • 2-3Dry Red Chilli
  • 2-3 green podsCardamom
  • 1 inch pieceCinnamon
  • 3-4Clove
  • 1 podBig Cardamom
  • 1/2Star Anise
  • as neededWater

For Cooking

  • 7-8 tbspMustard oil
  • 1/2 tspCumin Seeds
  • 3 medium, slicedOnion
  • 1 tspKashmiri Red Chili Powder
  • 1/2 tspTurmeric powder
  • 1/2 tspJeera powder (Cumin powder)
  • 1 tbspMeat masala powder
  • 3 medium, cut into quarters, friedPotatoes
  • 1 tsp, or to tasteSalt
  • 2-3 cupsHot water
  • 2 tbsp, choppedCoriander leaves

Step-by-Step Instructions

  1. 1.Marinate the Mutton

    In a bowl, combine 1 kg mutton with 1 tsp salt, 1 tsp turmeric powder, and 1 tbsp mustard oil. Mix well to coat all the pieces. Let it marinate for 15-20 minutes.

  2. 2.Prepare Onion Ginger Garlic Paste

    In a blender, add a 2-inch piece of ginger, 15-20 cloves of garlic, and 3 medium sliced onions. Add a little water and blend to a smooth paste. Set aside.

  3. 3.Prepare Tomato Cashew Paste with Whole Spices

    In the same blender, add 1 medium chopped tomato, 5-6 cashew nuts, 2-3 dry red chilies, 2-3 green cardamom pods, a 1-inch piece of cinnamon, 3-4 cloves, 1 big cardamom pod, and 1/2 star anise. Add a little water and blend to a smooth paste. Set aside.

  4. 4.Fry Potatoes

    Heat 7-8 tbsp mustard oil in a pressure cooker. Add 3 medium potatoes, cut into quarters, and fry until they are golden brown. Remove and set aside.

  5. 5.Sauté Onions

    In the same oil, add 1/2 tsp cumin seeds. Once they splutter, add 3 medium sliced onions and sauté until they turn light golden brown.

  6. 6.Cook Onion Ginger Garlic Paste

    Add the prepared onion ginger garlic paste to the cooker. Sauté for 3-4 minutes until the raw smell disappears and the paste starts to brown slightly.

  7. 7.Cook Tomato Cashew Masala

    Add the prepared tomato cashew masala to the cooker. Also, add 1 tsp Kashmiri red chili powder and 1/2 tsp turmeric powder. Mix well and cook until the oil separates from the masala, indicating it's well-cooked.

  8. 8.Add Marinated Mutton and Spices

    Add the marinated mutton to the cooked masala. Mix thoroughly. Cook on a low flame for 15 minutes, stirring occasionally, allowing the mutton to release its juices. Then, add 1/2 tsp jeera powder and 1 tbsp meat masala powder. Mix well and continue cooking for a few more minutes.

  9. 9.Add Potatoes, Salt, and Water

    Add the fried potatoes to the mutton. Add 1 tsp salt (or to taste, considering salt added during marination) and 2-3 cups of hot water, depending on your desired gravy consistency. Mix everything well.

  10. 10.Pressure Cook the Mutton Curry

    Close the lid of the pressure cooker. Cook for 4 whistles on medium-high heat. Once done, turn off the heat and let the pressure release naturally.

  11. 11.Garnish and Serve

    Open the pressure cooker. The mutton curry is ready. Garnish with 2 tbsp chopped coriander leaves. Serve hot with rice or roti.
