Heat 3 tablespoons of oil in a pan. Add the paneer cubes and a pinch of salt. Fry until lightly golden, then remove and set aside.
In a blender, combine chopped tomatoes, green chillies, ginger, soaked cashews, 50 grams of paneer, and chopped capsicum. Blend until a smooth paste is formed.
In the same pan with the remaining oil, add bay leaf, dry red chillies, cumin seeds, and one slit green chilli. for about until fragrant.
Add the prepared gravy paste to the pan. Mix well. Then add salt, turmeric powder, chilli powder, coriander powder, and asafoetida. Cook for , stirring occasionally, until the oil starts to separate from the paste.
Stir in one packet of Maggi masala. Pour in 1 cup of hot water and mix thoroughly. Bring the gravy to a quick boil.
Add the fried paneer cubes to the boiling gravy. Mix gently to coat the paneer. Let it for to allow the flavors to meld.
The no onion, no garlic paneer sabji is now ready. Serve hot with rice, roti, or naan.
