Step-by-Step Instructions

Step 1: Boil Chicken

Place chicken in a pot with water. Add chili flakes, black pepper, and salt. Boil until the chicken is cooked and all the water has dried out.

Step 2: Prepare the Sauce Base

Heat 1 tablespoon of oil in a pan. Add 0.5 tablespoon of ginger-garlic paste and sauté until fragrant.

Step 3: Add Sauces

Add 1 tablespoon of green chili sauce and 1 tablespoon of Schezwan sauce to the pan and mix well.

Step 4: Add Soy Sauce

Pour in 1 tablespoon of soy sauce and mix thoroughly with the other sauces.

Step 5: Cook Capsicum

Add 2-3 sliced capsicums (bell peppers) to the pan and mix. Add salt, black pepper, and chili flakes to taste. Cook until the capsicum is slightly tender but still retains its crunch.

Step 6: Add Onion and Chicken

Add 1 sliced onion to the pan and mix well. Do not overcook the onion; it should remain slightly crunchy. Then, add the shredded boiled chicken and mix all ingredients together to create the sandwich filling.

Step 7: Assemble the Sandwich

Take two slices of bread. Spread tomato ketchup and mayonnaise evenly on one side of each bread slice. Place the prepared chicken and vegetable filling on one bread slice, then top with 1-2 cheese slices. Cover with the other bread slice.

Step 8: Grill the Sandwich

Heat a grill pan over low heat and spread butter on it. Place the assembled sandwich on the grill pan. Grill one side until lightly golden brown.

Step 9: Melt the Cheese

Flip the sandwich to grill the other side. Add more butter to the pan if needed. Grate a generous amount of mozzarella cheese over the top of the sandwich. Sprinkle chili flakes and mixed herbs (oregano) over the cheese. Cover the grill pan with a lid and cook on low heat until the cheese melts completely.

Step 10: Serve and Cut

Once the cheese is melted and bubbly, the sandwich is ready. Remove from the grill pan and serve hot with chips, ketchup, and mayonnaise. Cut the sandwich into desired shapes, such as squares, for easy serving.

Pro Tips

• Adjust the amount of chili flakes and sauces according to your spice preference.

• Do not overcook the capsicum and onions; they should retain a slight crunch.

• When melting the cheese, adding a little water to the pan and covering it helps create steam for perfect melting.

• For a non-cheese version, simply grill the sandwich without adding cheese on top.

Recipe Variations

• Grilled Chicken Sandwich (without cheese)
