  • 3 mediumRaw Mangoes
  • 2 tablespoonsSalt
  • 3 tablespoonsRed Chilli Powder

For Tempering

  • 1/4 cupGingelly Oil (Sesame Oil)
  • 1 teaspoonMustard Seeds
  • 1 teaspoonMustard Powder
  • 1 sprigCurry Leaves
  • 1/2 teaspoonFenugreek Powder

Step-by-Step Instructions

  1. 1.Prepare the Mangoes

    Wash and thoroughly dry 3 raw mangoes. Chop them into small, uniform pieces.

  2. 2.Salt and Rest the Mangoes

    Place the chopped mangoes in a bowl. Add 2 tablespoons of salt and mix well. Cover the bowl and let the mangoes rest for 2 hours to release their moisture.

  3. 3.Add Red Chilli Powder

    After 2 hours, uncover the mangoes. Add 3 tablespoons of red chili powder to the salted mangoes and mix thoroughly until all mango pieces are evenly coated.

  4. 4.Prepare the Tempering

    Heat 1/4 cup of gingelly oil in a small pan over medium heat. Once the oil is hot, add 1 teaspoon of mustard seeds and let them splutter.

  5. 5.Add Remaining Tempering Spices

    To the spluttering mustard seeds, add 1 teaspoon of mustard powder, 1 sprig of curry leaves, and 1/2 teaspoon of fenugreek powder. Sauté for about 30 seconds until fragrant.

  6. 6.Combine and Mix

    Pour the hot tempering mixture directly over the mango and spice mixture in the bowl. Mix everything thoroughly until the tempering is well incorporated with the mangoes and spices.

  7. 7.Serve

    The Onam special mango achar is now ready to be served as a delicious side dish or condiment.
