Instant Halwa Recipe - No Soak No Grind Besan Halwa

Ingredients

For Halwa

  • 1 cupBesan
  • 2 tbspRava (suji)
  • 1/2 cupGhee
  • 2 tbspMilk (room temperature)
  • 1/2 cupSugar
  • few strandsSaffron
  • pinchSaffron food color
  • 1/4 tspCardamom powder
  • 1 cupHot water

For Garnish

  • 2 tbspGhee
  • 2 tbspCashew
  • 2 tbspAlmonds
  • 2 tbspRaisins

Step-by-Step Instructions

  1. 1.Roast Besan and Rava

    In a large pan, add 1 cup besan and 2 tbsp rava. Roast on low flame for 2-3 minutes until it turns aromatic.

  2. 2.Add Ghee and Continue Roasting

    Add 1/2 cup ghee to the besan and rava mixture. Mix well and continue roasting on low flame for 5-7 minutes until it is well combined and the color changes slightly.

  3. 3.Incorporate Milk

    Add 2 tbsp room temperature milk to the mixture. Mix well on low flame. The mixture will turn frothy and develop a grainy texture.

  4. 4.Add Sugar and Flavorings

    Add 1/2 cup sugar and mix well. Continue stirring until the sugar caramelizes. Then add a few strands of saffron, a pinch of saffron food color, and 1/4 tsp cardamom powder. Mix everything thoroughly.

  5. 5.Add Hot Water and Cook

    Gradually add 1 cup of hot water in batches, stirring continuously. The besan will absorb the water and the mixture will begin to thicken. Continue adding water and stirring until all the water is absorbed and the halwa reaches a soft consistency.

  6. 6.Fry Nuts

    In a separate small pan, heat 2 tbsp ghee. Add 2 tbsp cashew, 2 tbsp almonds, and 2 tbsp raisins. Fry on low flame for 1-2 minutes until the nuts turn golden brown and crunchy.

  7. 7.Combine and Serve

    Add the fried nuts to the prepared halwa and mix well. Serve the instant halwa hot.
