Follow each step to make the recipe successfully.
In a large bowl, add 2 cups of sooji (semolina) and 2 cups of besan (gram flour).
Pour in 2 cups of curd (yogurt). Add approximately 1 teaspoon of salt, 1 teaspoon of sugar, and 1/2 teaspoon of turmeric powder. Mix all ingredients thoroughly until well combined.
Gradually add water to the mixture, mixing continuously, until a smooth, thick batter consistency is achieved. Let the batter rest for to allow the sooji to swell.
While the batter rests, add water to the base of an idli maker and bring it to a boil. Lightly grease the idli plates with oil to prevent sticking.
Just before , add one sachet of Eno fruit salt to the batter. Mix gently until the Eno is fully incorporated and the batter becomes light and frothy.
Carefully pour the prepared batter into the greased idli molds, filling each mold about three-quarters full.
Place the filled idli plates into the idli maker. Cover and for on a medium to low flame until the idlis are cooked through and firm. You can check for doneness by inserting a knife or toothpick; it should come out clean.
Once cooked, carefully remove the idli plates from the steamer. Allow them to cool slightly before gently scooping out the dhokla idlis using a spoon or knife.
In a small pan, heat 2 tablespoons of mustard oil. Add 1 teaspoon of mustard seeds, 1-2 dry red chilies, and 8-10 curry leaves. until the mustard seeds splutter and the curry leaves become fragrant.
Pour in 1/4 cup of water and add 1 teaspoon of sugar to the mixture. Bring it to a boil, allowing the sugar to dissolve and the flavors to meld.
Arrange the dhokla idlis on a serving plate. Pour the hot evenly over all the idlis. Serve immediately and enjoy your instant dhokla idlis.
