Ingredients

  • 2 cupsMota Poha (chivda)
  • 4 tbspPeanuts
  • ½ tspRai (mustard seeds)
  • ½ tspJeera (cumin seeds)
  • 2Green chilli
  • 1Piyaz (onion)
  • to tasteNamak (salt)
  • ¼ tspHaldi (turmeric)
  • 8-10Curry leaves
  • 1-2 tspLemon juice
  • ½ tsp (optional)Sugar
  • for garnishKothamir (coriander leaves)
  • for garnishPiyaz (onion)

Step-by-Step Instructions

  1. 1.Prepare the Poha

    Take 2 cups of Mota Poha (flattened rice) and wash it gently with water using a strainer. Do not soak it for too long; just rinse and set aside to drain.

  2. 2.Fry Peanuts

    Heat some oil in a pan. Add 4 tablespoons of peanuts and fry them until they are golden brown and crunchy. Remove them from the pan and set aside.

  3. 3.Prepare the Tempering

    In the same pan with the remaining oil, add ½ teaspoon of Rai (mustard seeds) and ½ teaspoon of Jeera (cumin seeds). Let them splutter.

  4. 4.Sauté Aromatics

    Add 2 chopped green chilies and 1 chopped onion to the pan. Sauté until the onions turn translucent and slightly golden.

  5. 5.Add Spices

    Add salt to taste and ¼ teaspoon of Haldi (turmeric powder) to the sautéed mixture. Mix well.

  6. 6.Add Curry Leaves

    Add 8-10 fresh curry leaves to the pan and sauté for a few seconds until fragrant.

  7. 7.Combine with Poha and Peanuts

    Add the washed and drained poha to the pan, along with the fried peanuts. Add salt to taste (if adjusting) and 1-2 teaspoons of lemon juice.

  8. 8.Mix and Cook

    Gently mix all the ingredients thoroughly until the poha is evenly coated with the spices and turns yellow. Continue to cook for 2-3 minutes on low heat, stirring occasionally, until the poha is heated through and soft.

  9. 9.Add Sugar (Optional)

    Optionally, add ½ teaspoon of sugar and mix it into the poha for a hint of sweetness.

  10. 10.Garnish and Serve

    Garnish the prepared poha with fresh Kothamir (coriander leaves) and finely chopped raw Piyaz (onion). Serve hot with a slice of lemon.
