Add 85g of melted butter, 100g of sugar, and 1 teaspoon of vanilla essence to the food processor bowl. Close the lid and mix for at speed 5 until well combined.
Open the lid and scrape down any ingredients from the sides of the bowl. Add 2 large egg whites, 90g of all-purpose flour, and a pinch of salt. Close the lid and mix again for at speed 5 until a smooth batter is formed.
Pour the batter into two separate bowls, dividing it roughly in half. To one bowl, add 1 tablespoon of pure cocoa powder and mix thoroughly until the cocoa is fully dissolved and the batter is uniformly chocolate-colored. Leave the other half as vanilla flavored.
Plug in and preheat your waffle cone maker until the indicator light shows it's ready. The video uses a Bestron Sweet Dreams Waffle Cone Maker.
Using an ice cream scoop (or a spoon), place a single scoop of the vanilla batter onto the center of the hot waffle cone maker. Close the lid and cook for approximately , or until the wafer is golden brown and crispy. Keep an eye on the color to achieve your desired crispness.
Immediately after cooking, use a spatula or tongs to carefully lift the hot wafer from the machine. Transfer it to a clean, flat surface (like a cutting board). Quickly wrap the hot wafer around the cone shaping accessory, pressing gently to form the cone shape. Hold it in place for a few seconds until it sets. Once cooled, the cone will be firm and crispy.
Repeat the cooking and shaping process (Steps 5 and 6) with the chocolate-flavored batter. Continue until all the batter is used, alternating between vanilla and chocolate if desired. The recipe yields approximately 9 cones.
Once all cones are made and completely cooled, store them in an airtight container. Place a piece of paper towel at the bottom of the container to absorb any moisture and help keep the cones crispy. Seal the container tightly.
When ready to serve, fill your homemade wafer cones with your favorite ice cream. Enjoy!
