Follow each step to make the recipe successfully.
Add 1 teaspoon of salt to a bowl of water. Cut the small eggplants into wedges and the potatoes into medium-sized chunks. Immediately place the cut vegetables into the salt water to prevent them from turning black.
Thinly slice two medium onions and place them in a pressure cooker. Add 3 small ladles of oil and 5-6 green chilies. the mixture until the onions turn light brown.
Add 1 teaspoon of ginger-garlic paste to the onions and chilies. Then, add 0.5 teaspoon of red chili powder, 0.5 teaspoon of coriander powder, 0.5 teaspoon of cumin powder, 0.5 teaspoon of turmeric powder, and 0.5 teaspoon of salt. Mix all the spices thoroughly.
Add 3 chopped tomatoes to the cooker and until they soften and the oil begins to separate from the masala.
Drain the soaked eggplants and potatoes from the salt water (the water will appear dark, indicating impurities removed). Add the drained vegetables to the pressure cooker and mix thoroughly with the prepared masala.
Add the chopped fenugreek leaves (methi) and coriander leaves to the cooker. Mix everything together. Do not add any extra water, as the vegetables will release their own moisture during cooking.
Close the lid of the pressure cooker. Cook on a medium flame until 2 whistles. Once done, turn off the stove and let the pressure release naturally.
Once the pressure is released, open the cooker. The Hyderabadi Baingan Aloo curry is ready to be served hot with roti or rice.
