Lightly coat one side of each of the 8 slices of Texas toast with mayonnaise.
Preheat a large saucepan or frying pan to medium heat for 1-2 minutes. Place the bread, mayonnaise-side down, in the hot pan. Toast for 1 minute until golden brown. Flip and toast for another 1 minute. For subsequent slices, the pan might be hotter, so toast for about 30 seconds per side. Remove toasted bread and place on a serving dish with the mayonnaise-coated side faced up.
In a medium-sized bowl, add 6 large eggs (preferably at room temperature). Sprinkle 1/8 teaspoon of salt and 1/8 teaspoon of black pepper. Whisk all ingredients together until well combined.
Preheat a large saucepan to medium heat for 1-2 minutes. Spread salted butter around the saucepan. Pour the whisked eggs into the saucepan. Wait 10-15 seconds to let the eggs start cooking at the bottom. Carefully stir the eggs with a wooden spatula. Continue stirring occasionally. After about 1 minute of cooking, the eggs will start to come together. Once the eggs are almost fully cooked (around 2 minutes total cooking time), turn off the fire and let the residual heat of the saucepan finish cooking them to your desired consistency.
Preheat a large saucepan to medium heat for 1-2 minutes. Place one hot sausage patty in the saucepan. Fry for 3-4 minutes on one side until browned. Flip the patty over. Fry for another 3-4 minutes on the second side. After about 2 minutes on the second side, if desired, place a slice of sharp cheddar cheese on top of the patty and let it melt for 30 seconds to 1 minute. Remove the cooked patty with melted cheese and place it on a serving dish lined with napkins to remove excessive grease. Repeat for remaining patties.
Take one slice of toasted Texas toast (mayonnaise side up). Add a generous amount of scrambled eggs on top. Place one cooked hot sausage patty (with melted cheese) on top of the eggs. Add another slice of toasted Texas toast on top to complete the sandwich.
• If using regular butter for toast, melt it or let it soften to room temperature before spreading.
• When toasting subsequent bread slices, the pan might be hotter, so adjust heat and toast for about 30 seconds per side.
• When cooking eggs, wait 10-15 seconds after pouring into the pan before stirring to allow the bottom to set slightly.
• You don't have to constantly stir the eggs; stop occasionally to let them cook at the bottom for a creamier texture.
• Turn off the heat once eggs are almost fully cooked; the residual heat will finish them off perfectly.
• To melt cheese on the hot sausage patty, you can place it in an air fryer for a quicker melt.
• You can use American cheese instead of sharp cheddar cheese.
