Soak chickpeas for . In a pressure cooker, combine the soaked chickpeas and chopped potatoes. Add enough water to cover them and pressure cook for 4 whistles until they are soft and well-cooked.
Drain all the water from the cooked chickpeas and potatoes. Transfer them to a large plate and mash them well using a potato masher or a fork. Ensure the mixture is not completely smooth, leaving some texture.
To the mashed mixture, add finely chopped onion, grated ginger, salt to taste, 1 teaspoon red chili powder, 1/2 teaspoon garam masala, 1/4 teaspoon pepper powder, and 1/4 cup breadcrumbs. Mix all the ingredients thoroughly by hand until well combined and it forms a cohesive dough-like consistency.
Divide the prepared mixture into two equal portions. Take each portion and shape it into a thick, round patty, ensuring it's slightly larger than your burger bun.
Slice the burger buns horizontally into two halves. Heat a pan and add about 1 tablespoon of ghee or butter. Place the sliced bun halves, cut-side down, in the pan and them until lightly golden brown. Remove the buns from the pan.
In the same pan, add about 2 tablespoons of oil. Once hot, carefully place the prepared patties in the pan. Cook on medium heat for approximately until the bottom side is crispy and golden brown. Flip the patties and cook the other side until it's also golden brown and cooked through. Remove the roasted patties from the pan.
Take the bottom half of a bun. Spread green chili sauce, mayonnaise, and tomato ketchup generously. Place one roasted patty on top of the sauces. Drizzle some red chili sauce over the patty. Finally, cover with the top half of the bun. Repeat the process for the second burger.
